บทคัดย่อ
โรงแรมมณเฑียร กรุงเทพฯ เปิดให้บริการทั้งชาวไทยและชาวต่างชาติมาเป็นเวลากว่า 50 ปี โดยเน้นบริการด้านห้องพักและอาหารเป็นหลัก รับจัดงานเลี้ยงงานสัมมนาและงานอื่นๆ โรงแรมมีการบริการอาหารและเครื่องดื่มที่เปิดให้บริการ 24 ชั่วโมง ในแต่ละวันจะมีการใช้อาหารต่างๆในปริมาณมาก ซึ่งผู้จัดทำได้สังเกตเห็นว่า Breakfast Buffet ในช่วงเช้าเหลือเป็นจำนวนมาก ส่วนใหญ่นั้น คือ โคลด์คัท ได้แก่ โบโลน่าไก่ เบียร์แฮม มอลตาเดลล่าและเชดด้าชีส ดังนั้นทางผู้จัดทำจึงได้นำอาหารที่เหลือดังกล่าวมาทำเป็นปอเปี๊ยะโคลด์คัท เพื่อเพิ่มรายได้โดยการทำเป็นอาหารรูปแบบใหม่และลดต้นทุนให้กับโรงแรมได้อีกด้วย
ผู้จัดทำได้สำรวจความพึงพอใจในเมนูนี้ โดยใช้แบบสอบถามความพึงพอใจพบว่า พนักงานและลูกค้าผู้ตอบแบบสอบถามมีความพึงพอใจเป็นอย่างมากในด้านรสชาติอาหาร รูปแบบการจัดวางความสะอาด ความสดใหม่ ความเป็นไปได้ที่จะนำเข้าไปอยู่ในรายการอาหารของโรงแรมและความคิดสร้างสรรค์รายการอาหารใหม่ให้กับโรงแรม

Abstract
The Montien Hotel Bangkok has been served both Thai and foreign travelers for more than 50 years. The main services are giving the best hotel rooms and any cuisines. Furthermore, there are services about catering for a party, seminar, and others. They serve food and beverage round a clock, so there is a lot of food left in each day especially for the buffet breakfast in the morning. Most of them are Cold Cuts: chicken bologna, beer ham, mozzarella, and cheddar cheese. This can bring us to create the processed food that is called “Cold Cuts Spring Roll” to increase revenue and decrease the cost of the hotel.
This project “Cold Cuts Spring Roll” can imply that the people in the society usually eat something that is strange, new, and easy to eat since the result from the satisfaction questionnaire found that the staff and customers who replied the questionnaire are very satisfied with the taste of food, the pattern of placement, the cleanness, the freshness, the possibility to be one of the lists of food in the hotel and the creativity for the new list of food to the hotel respectively.
