บทคัดย่อ

โครงงานนี้มีวัตถุประสงค์เพื่อพัฒนาเมนูเครื่องดื่มใหม่ที่ชื่อว่า “Mint Lemon Refresher” โดยใช้วัตถุดิบเหลือใช้จากร้านอาหาร ได้แก่ ใบสาระแหน่และเลม่อน เพื่อลดของเสียและต้นทุนในร้านอาหาร นอกจากนี้ยังส่งเสริมแนวคิด Zero Waste และสร้างมูลค่าเพิ่มให้กับวัตถุดิบเหลือใช้ ผ่านกระบวนการทดลองสูตรและเก็บข้อมูลความพึงพอใจจากลูกค้า
ผลการดำเนินโครงงานพบว่าเครื่องดื่มดังกล่าวมีต้นทุนต่ำ รสชาติสดชื่น และได้รับความสนใจจากกลุ่มลูกค้า ซึ่งสามารถนำไปต่อยอดเป็นเมนูหลักหรือเมนูตามฤดูกาลได้ โครงงานนี้ช่วยส่งเสริมการบริหารจัดการวัตถุดิบอย่างยั่งยืนและเพิ่มรายได้ให้กับร้านอาหาร

Abstract

This project aims to develop a new beverage menu called “Mint Lemon Refresher” by utilizing leftover ingredients from the restaurant, namely mint leaves and lemons, to reduce waste and costs. Additionally, it promotes the Zero Waste concept and adds value to leftover ingredients through recipe experimentation and customer satisfaction data collection.
The project results show that the beverage has a low cost, refreshing taste, and attracts customer interest. It can be further developed into a main or seasonal menu item. This project supports sustainable ingredient management and increases revenue for the restaurant.
