บทคัดย่อ

โรงแรม ริว่าอรุณ แบงคอก (Riva Arun Bangkok) ให้บริการด้านอาหารและเครื่องดื่มสไตล์ไทยและตะวันตก ปัญหาที่พบจากทางแผนกครัว คือเมนูอาหารยังขาดความแปลกใหม่ ลูกค้าที่มาใช้บริการส่วนใหญ่เป็นชาวต่างชาติ ทางแผนกครัวจึงมีความต้องการที่จะค้นหาเมนูอาหารใหม่ๆขึ้นเพื่อให้มีความหลากหลายมากขึ้น ผู้จัดทำมีความสนใจที่จะนำวัตถุดิบที่เหลือที่มีอยู่ภายในห้องครัว คือ กระหล่ำดอก มาจัดทำเป็นเมนูอาหารพิซซ่ากะหล่ำดอกมังสวิรัติ เพื่อเป็นทางเลือกสำหรับผู้ทานมังสวิรัติ และเพื่อลดต้นทุนการผลิตโดยนำกระหล่ำดอกที่เหลือจากแผนกครัวมาปรุงเป็นอาหารจานพิเศษของทางโรงแรม คือ พิซซ่ากระหล่ำดอกมังสวิรัติ

ผลการจัดทำเมนู พิซซ่ากะหล่ำดอกมังสวิรัติ พบว่าด้านความพึงพอใจเมนูอาหารใหม่ พิซซ่ากะหล่ำดอกมังสวิรัติ ด้านคุณลักษณะด้านรสชาติ มีความพึงพอใจเฉลี่ย 4.97 ด้านความชอบโดยรวม มีความพึงพอใจเฉลี่ย 4.87 ด้านคุณภาพของอาหาร มีความพึงพอใจเฉลี่ย 4.83 ด้านกลิ่นของอาหาร มีความพึงพอใจเฉลี่ย 4.67 ด้านสีของอาหาร มีความพึงพอใจเฉลี่ย 4.53

Abstract

Riva Arun Bangkok serves a variety of Thai and Western food and beverages. One of the issues facing the kitchen department is the lack of new and distinct menu items. Since most of the hotel customers are foreigners, the kitchen department needs to search for new dishes to increase variety of menu items. The author was interested to apply remaining ingredients in the kitchen, such as cauliflower to create the Vegetarian Cauliflower Pizza menu item as an
alternative for vegetarians and to reduce the production cost.

The results indicated the mean score of the level of satisfaction with the newly developed menu item in the following aspects: taste was 4.97, overall preference was 4.87, quality was 4.83, smell was 4.67 and color was 4.53.
