บทคัดย่อ
โรงแรม แกรนด์ไชน่า (Grand China hotel) ให้บริการด้านอาหารและเครื่องดื่ม ทางโรงแรมต้องการเพิ่มทางเลือกด้านเมนูอาหาร ดังนั้น ทางคณะผู้จัดจึงมีความสนใจในการนำหมูเเดง มาผสมผสานกับเมนูคานาเป้ เนื่องจากคานาเป้เป็นอาหารชิ้นเล็ก เสิร์ฟในช่วงค็อกเทล มักจะรสเค็มหรือเผ็ด ทำให้แขกดื่มได้มากขึ้น เป็นการพัฒนาเมนูอาหาร สามารถทำกำไรให้ภัตตาคารเพิ่มขึ้น ทั้งนี้ คณะผู้จัดทำยังได้มีการทำแบบสอบถามเพื่อทราบถึงความพึงพอใจในเมนูคานาเป้หมูแดงครีมชีส จากการทำแบบสอบถามจำนวน 20 ชุด จากพนักงานในห้องอาหาร G Gallery & Cuisine และแขกที่เข้ามาพักและมาใช้บริการห้องอาหาร ณ โรงแรม แกรนด์ไชน่า และผลรวมความพึงพอใจที่มีต่อเมนูคานาเป้หมูแดงครีมชีส มีคะแนนความพึงพอใจเฉลี่ย 4.57 ซึ่งมีระดับความพึงพอใจมากที่สุด โดยพบว่า มีรสชาติอร่อยถูกปาก และเพิ่มมูลค่าได้จริง มีคะแนนความพึงพอใจเฉลี่ย 4.60 ซึ่งมีระดับความพึงพอใจมากที่สุด รองลงมา มีความคิดสร้างสรรค์ และ มีคุณค่าทางโภชนาการ มีคะแนนความพึงพอใจเฉลี่ย 4.55 เมนูคานาเป้หมูแดงครีมชีสเป็นเมนูที่สามารถทำให้ภัตตาคารได้รับผลกำไรที่เพิ่มขึ้น ลูกค้าเกิดความประทับใจกับอาหารจานพิเศษ

Abstract
The Grand China Hotel provides food and beverage services and would like to increase its food menu item options. Therefore, the students were interested in incorporating red pork with canapés because canapés are small dishes served during cocktails. They are usually salty or spicy, which makes guests drink more and can increase the restaurant’s profit. In addition, the students conducted a questionnaire to find the satisfaction with the red pork cream cheese canapé menu item. The 20 sets of questionnaire were collected from the staff in the dining room, G Gallery & Cuisine, and guest. I the total satisfaction with the red pork cream cheese canapé menu item had an average satisfaction score of 4.57, which was the highest level of satisfaction. It was found that the taste was delicious and the value was real. It had an average satisfaction score of 4.60, which was the highest level of satisfaction, followed by creativity and nutritional value. It had an average satisfaction score of 4.55. The red pork cream cheese canapé menu item can increase the restaurant’s profit. Customers were impressed with the special dish.
