บทคัดย่อ

เนื่องจากสถานการณ์การแพร่ระบาดของเชื้อไวรัสโคโรนา (COVID – 19) ในช่วงที่ผ่านมาทำให้ทางภัตตาคารอาหารญี่ปุ่นฟูจิ ศูนย์การค้าเซ็นทรัล ซิตี้ มีลูกค้าเข้ามาใช้บริการน้อยลง ส่งผลให้ทางแผนกครัวมีปริมาณวัตถุดิบคงคลังเหลือใช้ค่อนข้างมาก ทางคณะผู้จัดทำจึงได้ค้นคว้าศึกษาวิธีการถนอมอาหาร และการพัฒนาผลิตภัณฑ์ใหม่โดยใช้วัตถุดิบที่มีอยู่แล้วในครัวมาใช้ให้เกิดประโยชน์ โดยการจัดทำโครงงานผลิตภัณฑ์เซ็ตข้าวปั้นเป็นการพัฒนาเมนูใหม่เพื่อสร้างรายได้กับสถานประกอบการ

โครงงานเซ็ตเมนูข้าวปั้นเพื่อสุขภาพ มีวัตถุประสงค์ 1) เพื่อนำวัตถุดิบเหลือใช้มาสร้างเป็นผลิตภัณฑ์ที่ทำให้เกิดรายได้ 2) เพื่อศึกษาวิธีการและขั้นตอนการทำข้าวปั้นญี่ปุ่น 3) เพื่อเป็นทางเลือกให้กับผู้บริโภคที่ชื่นชอบอาหารเพื่อสุขภาพ โดยหลังจากที่ทดลองทำผลิตภัณฑ์ใหม่เสร็จสมบูรณ์ ได้นำไปแจกให้กับกลุ่มตัวอย่างได้ทดลองชิม และใช้แบบสอบถามออนไลน์เป็นเครื่องมือในการเก็บรวบรวมข้อมูลทั้งหมดจำนวน 30 ชุด จากการวิเคราะห์ผลสำรวจความคิดเห็น พบว่าผู้ตอบแบบสอบถามมีความพึงพอใจต่อผลิตภัณฑ์เซ็ตข้าวปั้นญี่ปุ่นเพื่อสุขภาพ โดยรวมอยู่ในระดับมาก มีค่าเฉลี่ย 4.15 หากพิจารณารายด้านพบว่า ผู้ตอบแบบสอบถามมีความพึงพอใจในระดับมากทุกด้าน  โดยมีความพึงพอใจมากที่สุดในเรื่องของรสชาติข้าวปั้น มีค่าเฉลี่ย 4.30 รองลงมาคือ ความสะอาดของอาหาร มีค่าเฉลี่ย 4.27 ปริมาณของข้าวปั้น มีค่าเฉลี่ย 4.23 สีสันน่ารับประทาน และการแปรรูปของเหลือใช้ให้เกิดประโยชน์มีค่าเฉลี่ย 4.10 ความคิดสร้างสรรค์ มีค่าเฉลี่ย 4.07 และการตกแต่งหน้าตาอาหาร มีค่าเฉลี่ย 4.00 ตามลำดับ

Abstract

Due to the epidemic situation of the coronavirus (COVID-19), Fuji Japanese Restaurant, Central City Shopping Center, has fewer customers. As a result, the kitchen department had quite a lot of raw materials left over. The student  researched and studied food preservation methods, and  developed new products by using the raw materials that were already in the kitchen. The project for a Healthy Onigiri (Rice ball) set product was a new menu item developed to generate income for the restaurant.

The healthy rice ball set menu item project had the objectives; 1) to use waste raw materials to create income-generating products; 2) to study methods and procedures for making Japanese rice balls; 3) to be an alternative for consumers who love healthy food. After completing the trial, the new product was distributed  to the sample group for a taste test, and used an online questionnaire as a tool to collect all 30 sets of data. It was found that the respondents were satisfied with the healthy Japanese rice ball set products. Overall, it was at a high level with an average of 4.15. The respondents had a high level of satisfaction in all aspects. They were most satisfied with the taste of the rice ball with an average of 4.30, followed by the cleanliness of the food with an average of 4.27, the quantity of the rice ball with an average of 4.23, and the colors appetizing. and the processing of waste to benefit with an average of 4.10, creativity with an average of 4.07, and an average of food decorations with an average of 4.00, respectively.
