บทคัดย่อ

โครงการม็อคเทลซันทูเดอะมูน (Sun to the Moon Mocktail) มีวัตถุประสงค์ 1) เพื่อเป็นการเพิ่มเมนูทางเลือกให้แก่แขกที่มาใช้บริการ 2) เพื่อศึกษาการทำเครื่องดื่มประเภทม็อกเทล 3) ช่วยลดปริมาณวัตถุดิบที่เหลือทิ้งในแต่ละวันโดยการนำกลับมาใช้ประโยชน์ได้ใหม่ โดยจากการปฏิบัติสหกิจศึกษาในแผนกต้อนรับส่วนหน้า ของโรงแรมมิลเลนเนียม ฮิลตัน กรุงเทพฯ (Millennium Hilton Bangkok) โดยผู้จัดทำมีหน้าที่ต้อนรับและเสิร์ฟเครื่องดื่มต่างๆให้แก่แขกที่มาใช้บริการ ผู้จัดทำจึงได้เห็นปัญหาว่ามีน้ำผลไม้และน้ำอัดลมกระป๋องเหลือทิ้งเป็นจำนวนมากในแต่ละวัน จึงคิดอยากทำเมนูเครื่องดื่มม็อคเทลที่มีความแปลกใหม่ขึ้นมาโดยมีการใส่วุ้นลงในเครื่องดื่ม ซึ่งลูกค้าสามารถทานได้ทุกเพศทุกวัย เมนูนี้มีชื่อว่า “ม็อคเทลซันทูเดอะมูน” (Sun to the Moon Mocktail)

จากการสำรวจความพึงพอใจของพนักงานเป็นจำนวน 30 คน พบว่าผู้ตอบแบบสอบถามส่วนใหญ่เป็นเพศหญิง มีอายุ 18-23 ปี และอายุ 24-29 ปี ระดับการศึกษาปริญญาตรี และส่วนใหญ่จะอยู่ในแผนกต้อนรับส่วนหน้า ผลจากการตอบแบบสอบถามความพึงพอใจที่มีต่อม็อคเทลซันทูเดอะมูน (Sun to the Moon Mocktail) ซึ่งสรุปผลจากตารางแสดงค่าเฉลี่ยและค่าเบี่ยงเบนมาตรฐาน มีระดับความพึงพอใจอยู่ในระดับมาก คิดเป็นค่าเฉลี่ยโดยรวมอยู่ที่ 4.23

Abstract

The Sun to the Moon Mocktail project aimed: 1. To increase alternative menus for guests; 2. To research how to make mocktails; 3. To help reduce the quantity of leftover raw materials each day. During the cooperative education as a receptionist at the Millennium Hilton Bangkok hotel, they were responsible for welcoming and serving various drinks to welcome the guests. It was clearly seen that there was a large quantity of juice and soft drinks left over each day. The student had the idea to create a new mocktail drink with agar jelly as an ingredient, which would be suitable for people of all age groups.

From the employee satisfaction survey of 30 people, it was found that most of the respondents were female, aged 18-23 years and aged 24-29 years with a bachelor’s degree. Most respondents worked in the receptionist section. The results of the satisfaction questionnaire for the “Sun to the Moon Mocktail” were summarized from the mean and standard deviation tables. There was a high level of satisfaction, representing an overall average of 4.23.
