บทคัดย่อ

ในการประกอบอาหารในแต่ละวัน ต้องใช้มะนาวและตะไคร้เป็นส่วนประกอบในอาหารหลายอย่าง จึงทำให้มีการทิ้งเปลือกมะนาวและตะไคร้เป็นจำนวนมาก  ประกอบกับการทำอาหารอยู่ตลอดเวลาทำให้ต้องคอยทำความสะอาดเตาและอุปกรณ์ที่มีคราบน้ำมันและไขมันต่างๆให้สะอาดอยู่เสมอเพื่อสุขอนามัยที่ดีของลูกค้า  โครงงานน้ำยาทำความสะอาดจากเปลือกมะนาวและตะไคร้ มีวัตถุประสงค์เพื่อนำเอาขยะจากการทำอาหารมาใช้ให้เกิดประโยชน์โดยทำเป็นผลิตภัณฑ์ทำความสะอาดแบบเข้มข้นไว้ใช้ในแผนกครัว และเพื่อลดต้นทุนของโรงแรมในการซื้อน้ำยาทำความสะอาด   ผู้จัดทำได้สำรวจความพึงพอใจต่อน้ำยาทำความสะอาดจากเปลือกมะนาวและตะไคร้ของพนักงานในแผนกครัวจำนวน  8 คน  โดยใช้แบบสอบถามออนไลน์ (Questionnaire) พบว่าผู้ตอบแบบสอบถามมีความพึงพอใจต่อน้ำยาทำความสะอาดจากเปลือกมะนาวโดยรวมอยู่ในระดับมากที่สุด มีค่าเฉลี่ย 4.35  หากพิจารณารายด้านพบว่า ผู้ตอบแบบสอบถามมีความพึงพอใจมากที่สุดคือ ด้านการขจัดคราบมันและไม่ระคายเคืองต่อผิวหนังมีค่าเฉลี่ย 4.50  รองลงมาคือ ด้านกลิ่นของเปลือกมะนาวและตะไคร้และด้านความสะดวกในการใช้ มีค่าเฉลี่ย 4.37   ส่วนด้านการลดต้นทุนในการจัดซื้อน้ำยาทำความสะอาดนั้นผู้ตอบแบบสอบถามมีความพึงพอใจในระดับมาก มีค่าเฉลี่ย 4.00

Abstract

In daily cooking, lemons and lemongrass are used as ingredients in many dishes. As a result, a large number of lemon peels and lemongrass were discarded. In addition to cooking all the time, the stove and equipment have oil and grease stains and must be kept clean for good hygiene of customers.

Lemon Peel and Lemongrass Cleaner Project’s objective was to reduce costs by using the remaining raw materials to make new products. To study the satisfaction with the cleanser from lemon and lemongrass peel, the author used an online questionnaire from specialized employees in the kitchen department of 8 people as a tool to collect data. The respondents sent the satisfaction questionnaire online. The results of the assessment of opinions in the questionnaire were as follows: that the respondents were satisfied with the cleaning solution from lemon peel at the highest level, with an average of 4.35. The most satisfied respondents were,in terms of removing oily stains and non-irritating to the skin, average was 4.50, followed by the smell of lemon and lemongrass, and the ease of use with an average of 4.37. The respondents had a high level of satisfaction with an average of 4.00.
