บทคัดย่อ

     การจัดทำโครงงานสหกิจศึกษาเรื่องเบอร์เกอร์แพลนต์เบสครั้งนี้มีวัตถุประสงค์เพื่อศึกษาวิธีการทำเบอร์เกอร์แพลนต์เบสจากผักที่นำมาประกอบการทำอาหารและเหลือใช้จำนวนมากที่ถูกนำไปทิ้ง โดยผู้จัดทำ ได้นำเอาผักที่เหลือทิ้งต่อวันจำนวนมากมาสร้างสรรค์เป็นเบอร์เกอร์แพลนต์เบสในรูปแบบเมนูทางเลือกให้กับแขกกลุ่มวีแกนที่ไม่ทานเนื้อสัตว์ และเป็นการเพิ่มรายได้ให้กับทางโรงแรม จากการสำรวจความพึงพอใจที่มีต่อผลิตภัณฑ์เบอร์เกอร์แพลนต์เบสพบว่ากลุ่มตัวอย่างส่วนมากเป็นเพศหญิงจำนวณ 13 คน คิดเป็นร้อยละ 65.00 มีอายุระหว่าง 21 – 30 ปี มากที่สุดคิดเป็นร้อยละ 60.00 เป็นลูกจ้างชั่วคราวมากที่สุดคิดเป็นร้อยละ 55.00  และเป็นบุคลากรที่อยู่ในครัวไทยมากที่สุด คิดเป็นร้อยละ 45.00 ผลสรุปจากตารางค่าเฉลี่ยและค่าเบี่ยงเบนมาตราฐานของความพึงพอใจที่มีต่อโครงงานสหกิจศึกษามีระดับความพึงพอใจรวมอยู่ในระดับที่มากที่สุดคิดเป็นค่าเฉลี่ยโดยรวม 4.52 หากพิจารณาด้านลักษณะพบว่าหัวข้อความเหมาะสมกับเป็นเมนูทางเลือกใหม่โดยรวมมีความพึงพอใจมากที่สุด คิดเป็นร้อยละ 4.65 และหัวข้อสีของเบอร์เกอร์แพลนต์เบสมีความพึงพอใจมากที่สุด คิดเป็นร้อยละ 4.55 และหัวข้อรสชาติของเบอร์เกอร์แพลนต์เบสมีความพึงพอใจมากที่สุด คิดเป็นร้อยละ 4.50 ด้านเนื้อสัมผัสของเบอร์เกอร์แพลนต์เบส มีความพึงพอใจระดับ มากที่สุด คิดเป็นร้อยละ 4.45 และกลิ่นของเบอร์เกอร์แพลนต์เบสมีความพึงพอใจระดับมากที่สุด คิดเป็นร้อยละ 4.45

Abstract

The purpose of this cooperative education project on Plant-Based Burger was to study how to make a plant-based burger from vegetables that were made from the large amount of leftovers that were discarded. The student used a lot of leftover vegetables to create a plant-based burger as an alternative menu item for vegans, and to increase revenue for the hotel. The satisfaction survey with plant-based burger products found that most of the sample were 13 women, 65.00 percent, aged 21-30 years, the most, 60.00 percent, were employed, the most temporary accounted for 55.00 percent, and the most personnel in Thai kitchen, accounted for 45.00 percent. The results from the table of mean and standard deviation of satisfaction with this cooperative education project had the highest level of overall satisfaction, representing an overall mean of 4.52. If considering the characteristics, it was found that: 1) The subject matter was most satisfied with the new menu alternatives overall, accounted for 4.65 percent; 2) the color theme of the burger plant-based was the most satisfied, accounted for 4.55 percent; 3) and the flavor section of the plant-based burger was the most satisfied, 4.50 percent; 4) the texture of the plantbased burger had the highest level of satisfaction, or 4.45 percent; 5) and the smell of plant-based burger had the highest level of satisfaction, accounted for 4.45 percent.
