บทคัดย่อ
โรงแรม ริวา เซอร์ยา(Riva Surya Bangkok) เป็นโรงแรมแห่งแรกที่เปิดทั้งห้องพักและร้านอาหาร แต่ทางครัวเวลามีงานจัดประชุม อาหารที่ไม่ใช้แล้วถูกทิ้งเป็นจำนวนมาก ผู้จัดทำจึงมีความคิดที่จะทำเมนูอาหาร ซาโมซ่าลาบหมู ผู้จัดทำได้เข้าไปฝึกปฏิบัติงานในแผนกครัว(kitchen) ดังนั้นโครงงานนี้จึงมีวัตถุประสงค์ดังต่อไปนี้ 1.)เพื่อการศึกษาข้อมูลภายในครัวโรงแรม ริวา เซอร์ยา(Riva Surya Bangkok) 2.)เพื่อเสนอแนวทางแก้ปัญหาในการปฏิบัติงานของครัวโรงแรม ริวา เซอร์ยา(Riva Surya Bangkok)
ผลของโครงงานที่ได้จากการแจกแบบสอบถามให้กับพนักงานแผนกครัวเพื่อให้ทราบถึงความพึงพอใจของผู้ทดลองอาหาร สรุปได้ว่า ผู้ตอบแบบสอบถามมีความพึงพอใจค่าเฉลี่ยโดยรวมอยู่ในระดับมาก จึงเห็นได้ว่าโครงงานนี้ สามารถช่วยโรงแรมลดต้นทุน และยังเป็นการนำของที่เหลือใช้มาแปรรูปให้เกิดประโยชน์ และยังเป็นการเพิ่มรายได้ให้กับโรงแรมอีกด้วย

Abstract
Riva Surya Bangkok is the first hotel to accommodation and restaurants. But the kitchen at a work conference. Food was left unused lots. Provider therefore have idea to the dishes menu, Spicy Minced Pork Samosa. Provider in a position of kitchen. This project has the following objectives; 1.) To study the operations of Riva Surya Kitchen 2.) To suggest the resolution for the problems in the operations of Riva Surya Kitchen. The results of the project from the questioning to the kitchen staff. To understand their satisfaction the experimental diet. Showed that the respondents had the highest Satisfaction .Therefore be seen that this project. The hotel can help reduce costs and also the introduction of the waste is processed to benefit and The Increasing revenue for the hotel.
