บทคัดย่อ

โรงแรม ลา เรซิดองซ์ บางกอก เป็นโรงแรมที่มีมาตรฐานในการให้บริการด้านห้องพักห้องอาหาร และสิ่งอำนวยความสะดวกอื่นๆ ทางผู้จัดทำ ได้ปฏิบัติสหกิจศึกษาในแผนกครัวและพบว่าวัตถุดิบที่เหลือใช้ อาทิเช่นพืช ผัก ต่างๆ เป็นต้น จึงได้นามาประยุกต์สร้างสรรค์จนเกิดเป็นผลิตภัณฑ์ใหม่ขึ้นมาในรูปแบบของผงปรุงรสจากผักรวมและไม่มีเนิ้อสัตว์เป็นส่วนผสมอีกด้วย ซึ่งสามารถทานได้ทุกกลุ่ม โครงงานนี้มีวัตถุประสงค์คือ เพื่อลดต้น ทุนและลดปริมาณวัตถุดิบที่เหลือใช้ภายในครัวของโรงแรม ลา เรซิดองซ์ บางกอก

จากนั้นได้สำรวจความเห็นโดยการทำแบบสอบถามความพึงพอใจจากกลุ่มตัวอย่าง คือ พนักงานโรงแรม ลา เรซิดองซ์ บางกอก จำนวน 30 คนเพื่อให้ทราบถึงผลของโครงงาน โดยผลการศึกษาพบว่า ผู้ตอบแบบสอบถามมีความคิดเห็นในระดับมาก กับรสชาติของผงปรุงรสรสจากผักรวม กลิ่นของผงปรุงรสจากผักรวมสีของผงปรุงรสจากผักรวมความคิดสร้างสรรค์ของการทำ ผงปรุงรสจากผักรวม ความชอบโดยรวมของผงปรุงรสจากผักรวม และผงปรุงรสจากผักรวมนี้ช่วยลดต้นทุนวัตถุดิบของครัวได้อย่างดี อย่างไรก็ตามระดับคะแนนเฉลี่ยต่อความพึงพอใจทั้งหมดได้ค่าเฉลี่ยรวมเท่ากับ 4.49 อยู่ในระดับมากที่สุด

Abstract

The La Residence Bangkok Hotel has a high standard in room services, restaurants, and many more.  The manager has inspected the kitchen department and has informed that there are wastes from many different vegetables and is able to make them useful by using left over varieties of vegetables to make vegetable seasoning powder.  The seasoning powder will be vegetarian since there is no meat in it whatsoever. Everyone can enjoy the seasoning powder made from mixed vegetable extracts.  This project was made to lower the cost in the hotel kitchen at la Residence Bangkok Hotel.

We have inspected the survey asking for satisfaction from 30 hotel staffs to see the outcome of the results.  The results concluded that the staffs are very satisfied with this project.  They were satisfied with the taste and the idea that vegetable is infused into the seasoning powder.  They also liked the idea that by doing this, it will lower the cost of production by re using left over products.  Anyhow, the score result for the satisfaction of the vegetable seasoning powder is 4.49, which is in the highly satisfied range.
